Cheese and Trees Mini Quiches


These are delicious and the kids love the name. Easy way for the little ones to eat broccoli! So easy.

CHEESE AND TREES MINI QUICHES
Makes 12; serves 6 Bake in standard muffin tins
1 small broccoli spear (about 4 ounces)
1 package pie crust w/ two 9 inch crusts
5 large eggs
3 tbs milk
¾ cup grated cheddar cheese, more for garnish
¼ tsp each salt and pepper

1. Preheat oven to 400. Cut broccoli into small florets, cut stem into ¼ inch pieces = 1 cup broccoli. Boil broccoli and cook till it is light green, about 1 minute. Drain , run under cold water.

2. Cut crusts with a 31/2 inch cookie cutter to make 12 rounds, 6 from each crusts. Gently place in muffin cups, crimp tops to fit. Place muffin paper cups on top of crusts ,weighted down with dried beans. Bake 10 minutes. Gently remove paper.

3. Whisk eggs, milk, cheese, salt and pepper. Spoon mixture into pastry shells, filling halfway. Add a little of the broccoli to each cup; top with remaining egg mixture so each cup is full. Bake until filling is puffy and set, 12 to 15 minutes. Serve hot, garnish with cheese.
